Caramelized Onion and Goat Cheese Puff Pastry Tart

Ingredients

• 1 sheet puff pastry, thawed
• 3 large onions, thinly sliced
• 3 tablespoons butter
• 1 teaspoon salt
• ½ teaspoon black pepper
• 1 tablespoon thyme leaves
• 4 ounces goat cheese
• 1 egg, beaten (for brushing)
• Honey, for finishing (optional)

Instructions

  1. Heat oven to 400 degrees.

  2. Melt butter in a skillet over medium heat. Add onions, salt, and pepper. Cook until deeply golden and jammy, about 25 minutes. Stir in thyme.

  3. Roll out puff pastry on a parchment lined sheet pan. Score a 1 inch border around the edges.

  4. Spread caramelized onions inside the border. Crumble goat cheese over the top.

  5. Brush edges with beaten egg.

  6. Bake 20 to 25 minutes until puffed and golden.

  7. Drizzle lightly with honey if desired and serve warm.
